Following on from that unforgettable night, last week we invited guests to enjoy a taste of Amilla and Finolhu at a culinary showcase hosted by their ‘Island Restaurateur’, the celebrated Aussie chef Luke Mangan. Highly regarded internationally as one of the leaders in Australia’s culinary scene, Luke will be spearheading the resorts’ restaurants. Our glamorous, relaxed ‘kitchen party’ was a dream invitation for any budding foodie and was attended by some of the UK’s leading press, plus a smattering of celebrity guests.
In the beautiful surroundings of a private home in Fitzroy Square, in the heart of London, Luke presented three delicious courses in his signature style – unpretentious, fresh and delicious food that you really want to eat. Kingfish sashimi with ginger and shallot, barbecued prawns and mango salsa, Persian feta with wild rocket and oysters with nam jim were followed by barbecued snapper fillets with tomato, caper and olive relish, roasted rib of beef, charred quails and aubergine, haloumi, chickpea and dried tomatoes with tahini dressing. Puddings of a slick chocolate tart, and an out-of-this-world pavlova with coconut cream and berries are still being talked about!
The party perfectly captured the spirit of The Small Maldives Island Company – a lighthearted, fun evening of unpretentious yet impeccable food and wine in relaxed surroundings. Thanks Luke Mangan! We loved every minute… and every mouthful!
